Goats' Cheese and Beetroot tower

This is one of the easiest and tastiest starters or quick lunches there is!

Slice beetroot - home cooked or pre-prepared!
Slice goats' cheese
Pop a piece of beetroot, then a piece of goats' cheese on a piece of baking paper and a tray.
Sprinkle the goats' cheese with dried mixed herbs, salt and pepper.
Repeat another two times so there are three slices of each.
Stick a piece of rosemary through each tower to keep it together.
Drizzle a little olive oil over each and pop into the oven for about 15 mins, until the cheese is melty and the towers are beginning to lean!

Serve with salad shoots and a splash of balsamic.
